    Ice Ice, Friday

    I'm excited for my new clear ice maker, which is scheduled to arrive today. I've been using a little lunch cooler to make clear ice until now, but the process is labor-intensive. The trick is to create an insulated environment that forces the air to move in one direction, which helps to create the clear ice. I can make a decent amount of ice with this method, but it takes a while. The new ice maker will be less work, but it will only make two cubes at a time. I'm hoping that the convenience of the new ice maker will make up for the smaller batches.

    And now, on to the cocktails! I'm out of white rum so I threw together a Cachaça Daquiri the other day and I liked it a lot.

    2 ounces Cachaça
    3/4 oz. lime juice
    1/2 oz. rich simple syrup

    Just now, I looked up a Cachaça Daquiri and found this recipe. So my plan is to make them both and compare mine with theirs.

    2 ounces Cachaça
    1/2 oz. lime juice
    1/4 oz. rich simple syrup
    1/2 chilled water

    I'm also inviting an Old Pal over this weekend.

    1.5 oz. rye whiskey (I'm going to substitute Wild Turkey 101 Bourbon)
    3/4 oz. Campari
    3/4 oz. dry vermouth ​

    look at that ice!!!!! That is some of the best I’ve seen on a few of the sites I’m on where others are trying this. That is crystal clear, in what seems as the entire block!

    excited to hear about the ice maker you are getting today as well! Let us know how it works.

    And…great cocktail lineup! I don’t know what I’ll be drinking but after this week….definitely will be enjoying something in the near future!!!

    If it's Friday it must be martinis in chez dewesq55. Plymouth gin with as capful of dry vermouth, fill the shaker completely with ice, gin to the top, stir it down and pour 2 ice cold martinis out. Garnish with olive(s).

      Attjack - could you tell the difference in gins? I’m getting lower on the costco size BS bottle I have, so you know, I’m looking for the next gin! I do like the dash of orange. I’ll have to try that one!

      barelfly Well, they are both London Dry gins but I think I could tell the difference side by side but I doubt I could identify them by taste. Now I'm curious and will try them and compare them. I used to stock Plymouth and Hendricks all the time. Have you tried those?

    Leave for NC tomorrow, then on to Aruba Sunday thru Thursday. Whats a good beach/boat cocktail. Forgive my ignorance, I drink like a fish, but am a simple man. I'm thinking something with an umbrella, lol. The only rum I like is Plantation XO and Brugal that is only sold in the DR.

      Cachaça is a delicious liquor made from fermented sugar cane juice. It's very popular in Brazil. Although some say it's similar to Rum I don't really see it. To me, it tastes like summer.

      barelfly No, Cynar and Campari are not very similar. I guess they're on different ends of the amaro spectrum.

      Hey, I'm getting ready to order a new ice machine for outside, I've owned about 4 and they've all lasted about 2 years. The one I have now is an Ikich. It has lasted over 2 years. I leave it on all of the time. So far, I've been impressed. I never spend more than $100 and there are plenty under that price. Cheers!

      pasmom I've considered an outside ice maker but am still just using an ice bucket. If I ever get one I'll look at the Ikich brand. But we were talking about CLEAR ice which requires a special process to create.

    Purc Pretty good results. I wouldn't characterize them as perfect but they should work well. I have another batch in the freezer now.
