This is one of my favorite beers of all time. It's a seasonal release from a , somewhat, local brewery. It's sold in 4-packs and is meant to be aged. You don't have to age it, but the beer evolves into something special. I buy a 4-pack, or two, every year. This one is ~ 3-4 years old and, at an ABV that weighs in at 15.5%, it packs a wallop.

It's the process of slow oxidative chemical reactions and, to a lesser extent, the yeast left in the bottle,(as you can see in the glass in the pic that I posted).Over time the sharp hop profile recedes & the flavor becomes more malt forward, which are the main factors in the way the flavors evolve. It adds body & sweetness to the beer. Most beer is brewed to be served fresh. This beer & barleywine style,are meant to be aged & taste much better with a few years on them.
Yup, I can attest. I bottled some dark DARK beer that was pretty sharp and harsh at 30 days, but I set it aside and at 6 months it was INFITELY better. Really, really good.
