I know Louisiana has a Boudin Trail (more than one depending on who you talk to) but I never knew that Texas has one too. This month's Texas Highways magazine declares that I-10 from Houston to Orange at the Louisiana border is the Texas Boudin Trail. They even spelled 'boudin' correctly.
No. 1 on the list? Redbird BBQ right here in my area. I talked with Amir, the owner, today and he is as excited as I've seen him:
One of our Regional Directors transferred to Michigan from Mississippi and brought me a large package of Boudin. I really liked it but don't see that up here.
I can confirm that you can grind meat for sausage in a food processor. keeping the grind size consistent is a bit of a crap shoot, but it can be done good enough.
