Preface: I was not able to sample the full spectrum at either location, some are opinions from my travel party some are my own.
Helberg (near Waco): new place with a glorious menu. I sampled their regular sausage (just meh) and pork belly taco (very good). Brisket was good, terrific bark and tenderness. Not as deep smoke flavor as Goldee’s. Their story is good, recommend you stop by if you’re near Waco. 3 teenagers in our group each got the brisket smash burger and inhaled them, so yeah, they highly recommend it. I will add, buddy in my group got their mango habenero sausage and raved about it.
Hurtado BBQ (d’town Dallas): This might be my favorite of the four places. I sampled the TX Twinkie and quail. OMG that quail was legit, reminded me of visits to my grandparents. So flavorful. The Twinkie was enjoyed by all. Their brisket was on par with Goldee’s. It’s a newer spacious facility, line moved quickly. Everyone liked their sides. I highly recommend this one. I bought his book, looking forward to cooking my way through it, the Tex-Mex offerings are what I like.
Heim BBQ (Dallas by Love Field): I really wanted to try more, but I just wasn’t hungry. Everyone got pork belly burnt ends, I took a bite and can confirm they are worth the hype, they melted in the mouth but had plenty of chew, flavor explosion. It’s a newer facility, line moved quickly.
All in all we had a terrific trip, “Boys from Oklahoma” concert was trip of a lifetime. Texas heat is real, but your AC is up to the challenge no doubt. Everyone in our group complained about having to eat Bama “garbage bbq” after all the good eats we had, so tip of the cap to our Texas brethren, yall got it going on for sure. I’ve been to Memphis, Georgia, SC & parts of NC; Texas is definitely my favorite style thus far.
