Because of some health issues we find our selves spending quite a bit of time in or near Waco,Tx. Today my daughter took me to Helberg Barbecue. It’s on the north side of Waco in Woodway. This isn’t an old rundown place, but a very well laid out newer building with large home made picnic tables to eat at. It’s owned and operated by a young couple who can cook. We ordered a large tray with brisket, spare ribs, and their house made jalapeño cheese sausage. The sides we picked out were pinto beans, old fashioned mustard and pickles potato salad, smoked mac and cheese, and banana pudding. The first thing I was asked was do you want the moist brisket or the more traditional dryer brisket. I went with the moist, which turned out to be some of the most incredible point slices. I know what over cooked brisket eats like, this was not grainy, stringy or too soft to cut, yet it would melt in your mouth. It may have been the best I’ve ever had. The flavor was spot on SP&G Texas all the way. The ribs were again so tender yet they were still bite off the bone, not fall off the bone. The sausage my daughter really liked, I didn’t try it I was too full by then. The sides for the most part were as good as every thing else. I wasn’t crazy about the pinto beans, they were too sweet for me. The potato salad, mac and cheese and banana pudding were excellent. There was a relish table set up were you could get all the home made pickles, pickled red onions, and such you wanted. The service was fast and friendly with plenty of room to find a table. The Helbergs are doing something right. If you find your self near Waco make an effort to eat here at least once.They are easy to find on the internet. On a scale of 1 to 10 this is an 8.5 to 9. I’m not great at this kind of write up. I hope I have conveyed just how much I liked this place. Happy trails y’all. My spell check changed the titles without me catching it It is Helberg BBQ.

I had two clients in Waco that I visited yearly. Since I only showed up once a year we always went to lunch/dinner on the employer's expense account, which for whatever reason was always at George's Big "O"... wink wink nudge nudge sayna more sayna more... I guess it was because everyone needs a Big O at least a year.. I can't say I recommend the place since it was the only place we ever went, but I wish we could have tried your BBQ joint.
Although, the best part of the trip was being able to stop in West on the way back to DFW for kolaches...
