This isn't BBQ, but while staying here in Nashville for Yvonne's surgery at Vanderbilt, I walked to a little cafe about 300 feet from the hotel we were staying in, which the sign called "Acapulco Burrito", but which the manager told me was online on social media (Instagram, etc) as "Acapulco West End". It has also only been open for 1 month, as a kind of "soft" opening he tells me.
HIGHLY recommended! Prices were pretty reasonable too.
I had the birria tacos, with rice and beans, for lunch on Wednesday. Amazing! Plenty of broth to dip the tacos in.

In fact, I liked the place so much, I walked BACK for my dinner, since Yvonne was in the hotel room on a clear liquid diet, and I didn't want to eat in front of her... For dinner I went with the Carne Asada plate.

Their beans are not refried as you can see, but were more well seasoned pinto's, with an amazing flavor. Rice was good too. For me the star of both meals was the tacos and the meat. Oh - and those are fried plantains on top of the rice! Never had them. Very interesting and good. Very sweet - more dessert like, but good with the rice and beans non the less. The plate came with a choice of corn or flour tortillas, not shown here.
I was the VERY FIRST customer to purchase a beer on their newly issued alcohol license, and the manager took a photo of me holding the Good People IPA shown here...

All in all, if you are in the area of Nashville near the Parthenon or Vanderbilt, I highly recommend this place. Pretty small, 1 block off the main drag, in what seems to be a converted house or residential building. 10-12 tables inside, more seating outside.
