    Central BBQ - Nashville

Yvonne and I had a VERY late lunch (almost 4pm!) yesterday after her medical appointment at Vanderbilt, and I had spotted Central BBQ on the way in, and it was the closest food on our way back out from Vanderbilt. It was literally 1-2 blocks from Vanderbilt Medical Center...

Central BBQ as you know is a mainstay of Memphis BBQ, but has expanded, and they now have a location in downtown Nashville. So this review ONLY applies to the location at 1601 21ST AVE S, NASHVILLE, TN 37212 (I'm not yelling! I pasted it from their website).

Being almost 4pm, there was at most one other customer in there at the time we walked in. We paid via an app to park on the sidewalk right outside.

Being VERY VERY hungry, I had this false notion I could eat a full rack of ribs. It was $20 for a half rack, and $27 for a full rack. I ordered it with onion rings and mac-n-cheese. Yvonne ordered a half chicken platter with slaw and fries. I ordered my ribs just with the dry rub, since I know that is how they make them in Memphis. Yvonne was offered "dry", "wet" or "muddy" for her chicken, and we were told that meant dry rub, sauced, or dry + sauced (muddy). She ordered wet. I considered a beer, but the line you order at doesn't sell the alcohol - you have to go to a separate bar for that, so we just went with water - probably best since I was fixing to hop back on the highway and drive in 5pm Nashville traffic, haha...

About 5 minutes after we got our water and sat down, someone from the kitchen came out told us they had run out of smoked chicken halves, and could offer anything else on the menu. Yvonne went with the pulled chicken platter in lieu of what she had ordered. About 5 minutes later the food came out.

    Here's mine:

First - I hate to say it, but the onion rings were the best part of this meal! They were really really good! The Mac-n-cheese not so much. I ate maybe half of that little cup of Mac. It wasn't quite Kraft Mac from a box, but it wasn't much better than that in flavor. I would not order that side again if I went there. The Mac I had on Sunday at Big Bob Gibson's was 1000x better. I could eat a big bowl of that. This - nope. The onion rings were top notch though - hot and fresh from the fryer.

The ribs - I started at the thinner end with the longer bones. The rub was good, and while too spicy for Yvonne's current taste buds (chemo did a number on them), not overly spicy. The ribs at that end were just a bit dry. I almost got some sauce for them in fact, but resisted. As I worked my way towards the middle of the rack of ribs, the ones towards the center were significantly more moist and closer to what I expected. Would I eat these ribs again? Yes. But I've had better in Memphis - at both the Rendezvous and at BB King's, which isn't even considered a BBQ destination.

Yvonne's pulled chicken was also a little dry and she said the chicken half she had at Big Bob's in Decatur was much better. Her slaw, which was mayonnaise based, had no flavor, and while she normally likes slaw, she put it aside. The fries were good, and I tried a couple, but not remarkable.

So, long story short, based on this experience, I would rank Central BBQ in Nashville as maybe a B- or even C+. Good, but they need to pay attention to the details, and not overcook things to the point of being dried out.

I will add that I brought home a half slab of ribs and some pulled chicken. I packed it in a to-go box, and got a couple plastic bags from the kid at the cash register, and dumped several cups of ice from the soda machine into a bag, and bagged that with the food. Our drive home was about 2 hours 30 minutes, so I figure the food stayed cold enough with the box sitting on top of ice the whole way...

Funny thing is - I had packed a small cooler with ice for our trip to Big Bob's on Sunday, but we ate every bite of food and had nothing to bring back that time, haha.

      The ribs did look dry.

I’m sorry that y’all are going to these supposedly incredible bbq places and getting less than great food. That only reinforces my belief that most of us here turn out much better bbq than we can buy. Once in a while I get something unlooked for when we stop at a bbq place but most of the time it’s just ok. Sometimes a side will be the star of the show, like the banana pudding with powdered ginger snaps on top we got at Helzberg near Waco, or the onion rings at Dyers in Pampa TX. Sadly both of those places are gone. Like y’all we’re not going to quit trying them.

The knowledge that with the skills learned here I can turn out great BBQ in my backyard leads me to NOT go to BBQ restaurants when out and about as much as other offerings - as I almost invariably end up disappointed. I'll go to BBQ when I think it's a notable establishment. In this case, I had heard for years about Central BBQ in Memphis, so when I saw this was owned by the same folks and was a 1/2 mile from where we were, I decided to take the risk.

Have you eaten at pegleg porker in Nashville? We eat there when we go. Pretty solid

I'll keep it in mind, if I decide to go for Q in Nashville. Hitting Central BBQ yesterday was mostly because it was the closest thing to the hospital, and we had not had lunch, and it was almost 4pm!

I went to Memphis three years ago with my wife and we could never find a parking spot at Central BBQ. That made me think the food had to be really good. Then I went back to Memphis last summer, and was sorely disappointed in my experience there. I felt like I had wasted $30...

I used to work in Nashville pretty regularly and never had any BBQ that ranked better than average. As opposed to Memphis that I only went to a couple of times but loved the ribs every time. Now the Hot Chicken in Nashville, that made me stop wanting hot wings it was so good (although there's no way Yvonne could handle that right now).

We have had Hattie B's a couple times, back before the chemo messed Yvonne's mouth up. Good stuff!

It stinks to go pay that kind of money for food and have it come out half-assed. They know it, too. Shame on them for sending something like that out of the kitchen.

I gotta think that this has a lot to do with the time of day you were there, restaurant doldrums for sure. Had you gone at peak time when the kitchen is much more jumpin', may well have been much better. If that rack was sitting in heat for hours after the lunch peak, it would explain a lot...

I am sure being there at an off hour could have explained the meat being dried out. However, the Mac-n-cheese would have sucked any time of day, same for the slaw...

About 10 years ago I ate at two Central BBQ locations in Memphis. It was life changing, and led me to create the rib recipe I use to this day (with a rub heavily based on MMD).

The food then was outstanding. Ribs moist and delicious. Sides tasty. Service solid.

Sad to hear this experience didn’t live up to the Memphis hype.

It's always like that. The first Memphis style ribs I had were made by my wife's cousin, using Rendezvous dry rub, and it was life changing for me, and put me on the quest to up my BBQ and rib game. He gave me 2 bottles of Rendezvous seasoning before we left that family reunion 20 years or more ago. I then tried the actual restaurant, and it was great. I went back a few years later, less great. But I think too my expectations had come up, from doing my own ribs on my offset smoker...

It seems the best barbecue at a restaurant is only the best until you start the journey of your own barbecue creations.

I wonder if my memory of those Central BBQ ribs is as accurate as I think, or if I’ve romanticized the idea because at the time I hadn’t made anything remotely close to what they served me.

Guess I better plan a trip to Memphis to find out!

I think Cozy Corner in Memphis is a reason for someone to go to Memphis. That's where I've been blown away by Memphis ribs two times in a row.
