Good luck with this. Is it a going to be a Cold smokehouse too? I have friends in Balmedie so would like to visit once you're sorted out with it. As an aside, one of my other hobbies is singing barbershop, and we have a forum where people ask for and receive accommodation at various places around the world by helping a fellow barbershopper. Not sure if this site has something like that?

I'd plan on a few days in and around Austin and Lockhart TX for sure. In addition to Black's, Kruez's, and Smitty's in Lockhart and La Barbeque in Austin, trips to Franklin's (you'll thoroughly enjoy standing in that line and gabbing with folks), Cooper's (in Llano or Austin) and the Salt Lick (just outside of Austin) are well worth visits. I'd also agree that Tennessee spots in Memphis and Nashville are worth the time and I'd say Carolina spots (both North and South) would be very educational regarding different styles--sorry, I have no names as I've never been in the Carolinas. If you go near Owensboro, Kentucky, a stop at Moonlight BBQ is mandatory. I personally didn't think their Q was that outstanding, but you'll get to have BBQ mutton!
I'd also say that the fact that ANY decent sized US city (and many small ones too) will have good local brews might be something for you to consider if you are going to "non-BBQ regions" just for the beers. Finally, be CAREFUL! We do drive on the wrong side of the road.
And Austin is a traffic nightmare.

Personally, I would avoid that tourist trap and follow the locals across town to Old Hickory. There you can find outstanding Q and BBQ mutton!

MeatMonster so excited about your decision to open up a real barbecue joint in your neck of Scotland! When I just mentioned this, my wife promptly voted that we needed to make a "Research Trip" over to taste your food! (I'm taking here to England this summer for our 25th Anniversary!)
Texas Barbecue is, well, incredible! You should visit Daniel Vaughn's work for the Texas Monthly Magazine, www.TMBBQ.com. He lists his top 50 Barbecue Joints in the World (Texas) there. I've visited a dozen of them, and my crew has added another dozen to that (they are younger and no wife/kids, so they take more weekend trips).
If I had 5 minutes to plan my BBQ Trip, I would Go to the Top Austin joints, Franklin, LaBarbecue, Micklethwait Craft Meats are all great. I also really liked Stiles Switch.
Head SW out of Austin just a bit to Taylor, TX, and Louie Mueller, one of the Deans of Texas Barbecue. Old, smokey, historic and great!
If a Saturday is in the mix near Austin, then the #1 rated BBQ Joint is not that far from Austin, Snow's in Lexington. They are only open on Saturday, and they open early. I'm betting it's the only bbq joint in the world with an 80+ year old female pitmaster! Who happens to fire the pits in the top barbecue joint in Texas!
Next, go South to Lockhart, Texas. It's not that far. Make small meal stops at the Big3 there, Kreuz Market, Blacks, and....I don't remember the 3rd. Kreuz's sausage is great!! The
Houston's Barbecue Scene has just blown through the roof! There several great places, many of which are very new. Real Craft Barbecue guys doing the right stuff with creativity and zeal! Corkscrew BBQ, Killen's, Tejas Chocolate Factory, Pinkerton's, The Pit Room, Roegeles...WOW! These are all great! (I've not made it to all of these, but either me or my right hand, Sam, have, and they are all really really good.)
The top Texas bbq joints just attract the traveling tourists, like us. I hear that the places like Franklin and Mueller have 70%+ of their business from out of towners. I believe it! Make the top 10 in the TM BBQ list, and you better get ready to work day and night to keep up!!
After you have a great time in Texas, head east on I-10 about 2 hours if you want to hang with a fellow Pit Member, your's truly, PaulstheRibList, your friendly, neighborhood @BishopofBBQ, in Lake Charles, LA.
As you head up to Ohio, if Southern Illinois is in the mix, stop by 17th Street Barbecue in Murphysboro, Illinios. I went to their BBQ School last year, and it was great! Amy Mills runs that, and they are all super great and make great food!
We stopped at Central BBQ in Memphis, and it was fun. Food was not that noteworthy.

For sure, I'll let you know! Small world! On the cold smoker, yes not initially but, the produce I have available to me in Scotland and in Aberdeenshire where I live makes it a no-brainer. Don't get me wrong there's plenty of competition out there in terms of the cold smoked products however they tend to be relatively mainstream why not shake it up a bit with some flavours and approaches that push the boundaries a little.Originally posted by rat_rabs View PostGood luck with this. It's an Irish plaid - "County Fermanagh" were my Grandmother was born. In Ireland it's based on where you are from, in Scotland it's your clan. I married into the Grant clan in Scotland, butcwanted to have a kilt tied to my heritage.

I would recommend the Bourbon trail as mentioned before, we went through the Woodford Reserve distillery and had a fun time and awesome samples.
As far as BBQ goes, well everyone has already given you great advice really. Just don’t forget to try and visit some of the small Mom and pop places. Over the years I’ve found some really good BBQ in these smaller restaurants. But most of all you should just try as many different regions of BBQ as you can. I like it all...HA, but Texas, Kansas City, Memphis and the Carolinas all could be on your route. Each have different styles of Q but are great in their own way.
Just take it slow and have fun.......can you tell I’m jealous!!

Ireland for sure the Guniess brewery tour is great, fantastic views from the top of the observation tower where you will get a free pint to enjoy! Thursdays they have live music up their too, at least they used to its been ages since i was there. In terms of Scotland...phew you need to narrow it down - obviosuly the various whiskey trails are amazing. If I was you I would stay in one of the Scottish Islands - my favorite is Islay (NW of Scotland) - its realitvely small and there are great assisted tours of all the distilleries so you dont need to drive! Obviosuly the Highlands are amazing the scenery is beautiful, there is good shooting and fishing and outdoor sports if you get the right times.
