The Butcher BBQ Stand in Wellston OK. I've yet to make the trip but the young man who owns and operates this business is a friend of the family, and I'd just like to get this out there. I've read nothing but rave reviews. If you're in the area check him out
I trip from south OKC to the Butcher BBQ Stand 2 or 3 times a year. Its 45 miles from me , but very worth the trip ( especially since I can take the new Kickapoo turnpike ) .
And I was there yesterday. It just gets better. Its not Texas barbecue. Its probably closer to what little I know about KC barbecue. Maybe its Oklahoma barbecue.
Its their thing, from the get-go, to add the Twinkie.
And it really fits their flavor profile. They like sweet. Best I can tell, the ribs are toned down comp ribs. Their sauces are sweet and tangy, think about a version of Head Country. Their Apple Pie beans are a top notch side.
I probably should add more, the owner is Levi Bouska, son of David Bouska whose won a lot of comps regionally and he won the Jack Daniels in 2018. He was also on three seasons of BBQ Pitmasters. He's a butcher by trade and markets rubs and injections under the Butcher BBQ brand.
His barbecue has comp roots. He's done a vid for the BBQ Stars series available on this site.
I use his rubs, and his chicken is the best I've found if you follow his recipe on the video from BBQ stars. Did not know they had a BBQ restaurant. To bad, to far for me. Lucky You. I admire him, and he is one of the best in BBQ.
I was at Butcher a week ago tomorrow ................ and dayuumm , it was good. The ribs and burnt ends were fantastic.
However, I can't give it Numero Uno, Edge Craft in OKC is notch ahead, in my book. The central Texas style brisket there is just phenomenal .
All that said, I went to old school Oklahoma bbq joint today. I was at Jacks Bar-B-Q in OKC, on Route 66, which in OKC is known as NW 39th Expressway. Was founded in 1963. This place takes ya back. And to survive that long, they're doing something good.
It very much is a bbq joint. Ya won't get cloth napkins there, like ya do at Clarks Crew. Hey, the ribs were great. And the pulled pork was good. They also had a side dish called garlic cole slaw that was excellent .
