I have passed the billboard on I-40 for Phil's for years traveling to NC for work (I am "semi" retired; I work part time). The other day I decided to stop. It is located just east of Ashville. I had the 3 meat plate with ribs, chopped brisket and pulled pork, along with baked beans and collards. It was $30, and you get a lot for it. The ribs were decent, slightly overcooked but tha is probably from being held. The brisket and pork were pretty dry. The beans and collards were above average, but little sweet. The best thing were the sauces and the hush puppies. The hush puppies were excellent. The mustard sauce and the vinegar sauces were so good that I bought a bottle of each. And they were only $6 apiece. I won't be going back, but is was an itch I scratched.

Good review.
A couple of questions come to mind:
1) If the sauces are that killer, does the restaurant have any incentive to improve the meat if it can be doused in great sauce?
2) Do I just go back to buy sauces for home use?
3) Do I go back to potentially get better meat (assuming better chef) and killer sauces or never return?

While it may not have been award winning, it looked pretty good. I’ll bet you didn’t go away hungry, and the real question is if you were on the road and hungry would you stop there and eat or just do fast food. Not every place needs to be in the top team. Scoring from 0 to 5 wheat would you give it?
