On a recent trip to New York we stayed in Fishkill and our last night in town the 2-family group I was in wanted to try a restaurant just a couple skips from our hotel, since we'd all had a long day. We'd done pizza the night before (Sal's, it was okay but not wow-ing) so this night was BBQ night.
My wife found "Beast" online. It was awesome.
They have quite the bourbon assortment if that's your thing, even some higher end ones that most places don't have. The separate shelf under the neon pig has an assortment of hard to find Buffalo Trace offerings.


It's not a big place, it's long and skinny like a downtown storefront type place, but there are several tables outside with great lighting.
I got 1/2 lb brisket (fatty), 1/2 rack of their crispy Seoul gochujang pork ribs, and 12 wings since they were on special that night. No I'm not really that big of an eater, I took a good bit home.
Brisket was surprisingly excellent. Great tenderness, perfect saltiness and seasoning w/o being over- or under-done, and really good bark. My only complaint, minor as it is, was it was sliced with the grain, but since I asked for fatty and clearly got fatty point, it mattered nada. And it was literally my only complaint. One piece nearly split under its own weight. Not crumbly at all, dare I say...perfect.




The ribs were great, they were crispy and the gochujang was on point.


The wings were smoke-grilled, and tasted just like my/our homemade smoke-grilled wings. They were extra well done, which is exactly how I prefer my wings, can't stand flabby soft wings. Didn't get wing pics, but you know what they look like. They offer a slew of dry rub and sauces. I opted for Buffalo on half and lime pepper dry rub on the other. Both great.
Perhaps my most favorite, the most unique, was the BBQ sauce. It was red, served on the side as it should be. It didn't taste like you might think, there was a different vibe. It took me forever to figure out what I was tasting in it. Then it hit me, it reminded me of marinara. What? I know, odd for BBQ. But it did, and it worked incredibly well. There was a little vinegar but it took a far back seat. And a little spice too. But much more herbal notes front and center. Not ketchup-y, but also not uber-fresh like Black Swan.
My wife and her friend split the brisket nachos and she said they were fantastic. My buddy got that night's special sandwich, the brisket street corn sandwich. He said it was amazing and it looked like a sloppy handful of heaven as he was silently putting it away with wide eyes.
As I was leaving I asked the waitress to ask the owner (she said he's Peruvian) for even a hint of one or two ingredients in the BBQ sauce, she said he probably won't spill. I told her I'm from MI if that helps, i won't steal his recipe and open up a place across the street. She came back and said "Sorry, he won't sing!", so I am left to figure this one out on my own. Maybe there will be another new Huskee's Shawsh coming out, inspired by a Peruvian-New York BBQ joint.... My wife and I told them abotu AmazingRibs.com, so who knows, maybe we'll see one or two of them around these parts.
If you're ever in the Fishkill, New York area this place will not disappoint. Well worth the drive!
