We (SWMBO and me) went to Las Vegas last week to see Penn & Teller--HIGHLY recommended. Vegas, not so much. The casinos have really gotten greedy--I'll post a rant later--and it'll be a long time before we return, if ever.
Meantime, we ate at Jaleo, a tapas place by Chef Jose Andres who is noted for his humanitarian efforts in places like Puerto Rico. Among other excellent (and expensive!) dishes, we had the jamon iberico de bellota. At $50/ounce, it's not an everyday thing, but it is something you must try if you have the chance. We split a half ounce of it, sliced paper thin, along with another 1/2-ounce of a "lesser" Iberico at $35/ounce. We both thought the cheaper one was slightly better and we both agree that these hams put prosciutto to shame, though I'll admit to never having freshly shaved prosciutto.
We also discovered Jidori chicken at a Wolfgang Puck "bar and grill" in our casino/hotel (MGM Grand). Puck's place wasn't as pricey as most and the Jidori chicken was a revelation. It's a "super-organic" chicken that some apparently eat RAW?!?! (not us). It's another must try. https://farmstandelsegundo.wordpress...idori-chicken/
