New brick & mortar in Ames (been open around 6 months now), that started out as a food truck. The owner has competed on the circuit and won some huge competitions, however his vision for BBQ is more of the newer craft style. They won the Royal Open for Brisket and the Invite for Ribs. I've eaten there twice (it's about a 45 minute drive for me) and I was blown away both times. The brisket (I asked for moist) came out unbelievable and the burnt ends were solid (these weren't spectacular in my opinion the brisket is better). The ribs were amazing, bite it off the bone and flavor was killer. The brisket & chill (their take on chili w/brisket) is amazing and served over a nice piece of Cornbred pudding, so damn good! The sides, ehhh they actually don't do it for me. I'm more of a traditional side guy and these just aren't there for me. However, the meat is the star and I'll keep going back if they turn em out that way.
