I've have had one of their units for about 10 years. It does an okay job. Four years ago, I bought a Ken Onion Work Sharp and the Chefs Choice has been gathering dust ever since. I can literally shave with any blade put through the Work Sharp. Couldn't do that with the Chefs Choice. The Work Sharp does require a little more work because you have to change grit belts once or twice, but the end result is well worth the extra bit of work/time required.Originally posted by gcdmd View Post

I totally disagree. I have a Chef's Choice 130 and use it to sharpen and hone my knives. It puts the finest edge I have ever had. I to can shave with my blades. LOL Also why change belts for different blades at different grinds.

I don't change belts for different knives. I change belts for different GRITS (not grinds) just as you change slots on your Chefs Choice for different GRITS. If you ever did a side by side comparison of the Chefs Chief with the Work Sharp, you MIGHT change your mind - or not. I did a side by side and the Work Sharp won IMHO. If you like what you get with your Chefs Choice, then I highly encourage you to stay with it.
