Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
I wasn’t very happy with the beef short ribs that I got from them about a month ago. They were on sale also so I wish you more luck than what I had.

I'm surprised to hear that DWCowles. I buy quite a bit of Creekstone product through our local food service distributors and am always happy with their stuff. Guess you just got a bad shipment.

I ordered my very 1st meat from Creekstone Farms last weekend.
For this first order, I went with a "trial" 16-18 pound packer, however, it arrived today with all ice packs melted.
The temperature of the meat measured 57°F to 61°F depending on where I checked it with my Thermapen Mk4.

They state briskets are never frozen and shipped fresh.
They say that they pack them with ice packs and dry ice.
If there WAS dry ice in this shipment, there is no evidence of that.
(Am aware that dry ice changes from a solid to carbon dioxide and not water like regular ice)
But still, was hoping to see empty plastic bags or something that the dry ice was in.

It is sealed in a cryo bag.
So, I immediately "Flash-Cooled" this beautiful packer with a mixture of ice, cool water and salt which when stirred temped out at 24°F.
Of course, I did this to arrest any bacterial growth that may have started on the surface due to the over 40°F condition.
Called and left a message as well as filled out an online message to them.

Dang BBQ_Bill that's not a good report! Without knowing how long it was at that temp I don't know if I'd risk it. How long did it take to get to you? I'm guessing Creekstone will make it right for you. I'm surprised they would ship fresh meat and not frozen. Fresh meat would need to be shipped over night and well packed with dry ice and in a styro foam cooler or something. Keep us posted on how this turns out.

Hopefully they will take care of you. When I have received meat in that condition from other retailers they are always very quick to get a replacement out. I know there will always be a shipment here and there that have issues and I am fine with that as long as the retailer takes care of the problem.
And yeah, there have been a couple instances where I have pushed my luck and cooked the thawed meat. It was about 45 degrees internal and I mostly just used it as a test cook but ended up eating it as well.
