@Sheila Ann we have a great taqueria here that offers cabeza and lengua, I've tried both, they're good, but I'll stick with al pastor or carnitas.

My assistant manager who is Mexican said people might laugh at that but it is delicious. She said her family cooks it in a big pot and pulled it up online. Huge pot with an insert so it steams, doesn't boil. They cook it outdoors over coals. Meat just pulls off easily. Excellent tacos Lily said.

Hulagn1971 Id be curious if the butcher would willing to cut it in 4 segments?
Im certain my family and most friends would be turned off by the visual, i most certainly am not. My wife was, and i asked her how is it different from the front shoulder bone in a pork but, or eating meat off rib bones. Its bones and meat either way.
But i’m not buying a bigger grill, nor digging a pit in my yard when i can already buy beef cheek and tongue, which we keep in our free er at all times.Last edited by Richard Chrz; August 21, 2026, 12:20 PM.

Common to find on Mexican food trucks here in LA. Use to work for a company in Sylmar, CA and the majority of the workforce was Hispanic. When the food truck came in morning, the guys would try to get me to eat cow head tacos. I tried it once. Just not my cup of tea. They had a hoot watching me eat them though.
When I ordered my regular tacos, I always ordered them ”Gringo style”

My grandparents lived in Liverpool during WW2, he worked for Marconi on direction finding equipment which was the forerunner of radar. They were austere times, constant threats from the Luftwaffe and everything severely rationed.
They had a dog who unbeknownst to them used to pop down the local butchers where they would feed him a few scraps. One day the dog went missing and during the search someone spotted him slowly making his way back to the house backwards dragging something... which turned out to be a whole cows head complete with ears which the dog was using as a tow tool, apparently some comedian of a butcher thought it would be funny to see what the dog did.
Anyway the head was fresh and the family cooked up a number of dishes from this unexpected offering, and till the day she died my mum always loved cow (ox) tongue!
