    Thank you again Bill for the write up.

    Last couple of years I have only purchased lamb at Costco. Anyone have a strong opinion on the lamb from ALDI? Never really shop there.

      I've gotten the lamb breast plate a few times. There are a number of ways to cook it, but it's a tough cut, so it wants long, slow braising.

      This time, I followed a method I saw in a few places on YouTube:
      - remove the breast plate ribs (they're a separate layer)
      - trim off any excessive fat (this yields about 2/3 of original weight)
      - season it, stuff it, roll it, tie it up into a log
      - brown it, add mirepoix and broth and wine
      - braise it slow (3 hours?)
      - slice and serve
