Well, St Pat's is done now, and that means no more Corned Beef... or at least, it's back up to its usual exorbitant price, which I don't want to pay. Right now, I've made a lot of pastrami (very easy, follow Meathead's recipe) and it's a race to see whether I'll get to freeze any of it before it's all eaten. I still have some points left for just Corned Beef with Cabbage, and there are few things nicer than that.
But we're moving on, and Easter is in the rangefinder now. We only have a week or so left of Lenten parties, celebrations, and tailgates before the Big Day comes, with its own traditions of Hams, roasts, and insane amounts of candy, chocolate and eggs. And later, egg salad. Maybe egg salad with ham. Why do we not make salad out of the leftover chocolate bunnies? Tradition is a harsh mistress.
The candy part, at least, is on full display in all the food stores. I'm waiting for discount hams to make an appearance. There's nothing I like better than a leftover smoked ham sitting in the fridge, waiting to be picked at. And of course, the ham bone, for flavoring collards or maybe rice and beans.
But the star of the show this week is Pork Butt, which is lovely almost any way you can prepare it. The Lion has the best price, but The Teet is close behind. I've lately begun making Scrapple from the shoulder bone and its surrounding meat. That's it, when cutting up your Butt just toss the bony third with everything around it into the Instant Pot for a few hours and make a strong broth, gather the corn meal and spices, and off you go into Scrapple heaven. (Disclosure: I grew up in the Philadephia suburbs, and scrapple was a favorite for breakfast in our family.) What's best is I know what's in it.
