Ok, it's the last full week before the annual Turkey extravaganza, and prices are holding steady so far. LIDL is the leader with 25-cents-a-pound turkeys, and Food Lion and Harris Teeter right behind with 29 cents. ALDI is doing fine with 97-cent Butterballs.
I've been stocking up, ad not just on those, but less-perishables as well. Instant mashed potatoes packets are going cheap, and surprisingly, Duke's mayonnaise is going cheap as well. FT and HT have it at ~$4 a jar, and on Friday LIDL will have it at ~$3. I typically make my own, but it's nice to have a spare jar or two for those mayonnaise-related emergencies.
One thing I have not seen among the discount turkeys (they all seem to be from Shady Brook Farms) are large ones. I haven't seen any birds over 15 pounds. Which is fine by me, I like that size. It's easier to manhandle two 14-pounders than one 24-pounder, but I'm wondering what's up with the supply chain. Although I hadn't really checked what sizes the Butterballs come in, because I usually don't buy them.
My turkey method is this: Apart from the hero bird (the one on the platter on the day), I'll just defrost any remaining turkeys, split them (power tools!) and separate the leg quarters and breast/wing area. I'll debone the breast, leaving the first wing joint on. Everything else goes in the stock pot. I'll then salt the parts, season them (pepper + poultry seasoning), and vacuum bag them for sous vide. Once done, I just cool them and throw them in the freezer. Later, I can then pull them out and roast/broil them until hot and crisp. the juices in the bag become gravy. Winner Winner Turkey Dinner!
So if I don't see you all before T-Day, have a very warm and happy holiday, with whatever family you can gather together. (If you don't have one, make or find one -- just a note, home invasions are frowned upon) And enjoy the meal; remember, it isn't just about the food.
