Well, St. Patrick's Day is looming on the horizon, and Corned Beef Specials are upon us. Stock up now, and fire up that Instant Pot. Or start making pastrami! (I know, the purists would scream "THAT'S NOT PASTRAMI!", but yes, it kind of is.)

Today is Ash Wednesday, meaning Lenten goodness for the next month and a half, and also lots of seafood specials! Also, lots of 'not-so-great' 'specials', that the chains would have us believe are extraordinary value. They are not. Tilapia abounds, though, and it's a good choice: affordable, versatile and fairly forgiving, in case you are heavy-handed on the grill.

I bought a couple flats at Aldi yesterday. Pricing per pound of corned beef is misleading as it contains 35% mixture! And we know liquid weighs more than the meat. Not sure what I really paid per lb for the flats. Don't care as I love to make a good corned beef with root veggies dinner. Already picked up some rutabaga parsnips and cabbage. Will have a slow cooker with the two flats and a couple pounds of smoked sausage and another large pot with many vegetables in it. Then have about eight members of the church come over and help us pound away at it

Yeah, I'm always bothered by the amount of liquid in some of these. But I just can't resist point cuts when they are ~$3 / lb. It makes a nice lunch (or 2 or 3).
