    Choice Beef at Costco

    Just back from Costco. I saw no Prime beef for sale, but at least 20, twenty choice full packers. Big dawgs at $3.99 lb. Stacked n packed. I picked up my usual $4.99 fresh Roasted whole rotisserie chicken. When ever I go, if there are roti chicks, I get at least one. Sheesh, ya can't get a fresh, needing to be cooked whole chickie for under $10 and these guys are huge!

    Ain't nuthin' on this green earth wrong with a Choice packer. They will cook up nearly, if not fully, identical to a Prime. Also ain't nuthin' wrong with a roti' chickky! I agree, I haven't cooked whole chickens in years due to them being so pricey when pieces and whole rotisseries are so much more affordable.

      When I occasionally find affordable whole chix, I buy them to make pollo a la brasa on the rotisserie

      I cut up a choice packer from Costco to make corned beef. Flat was cured and the point was not. I was planning on smoking the point for the kids dinner last week but left it out overnight on the counter. Into the garbage that went. Flat was good though. Home Costco had a few prime packers at $4.29/lb last week but I’m good. I still have a Wagyu one I picked up last year that’s in my freezer.

        First thing I would do is poke with my thermopen. That will make me feel better about where I am starting from. Smell test? Beef is nowhere as scary as pork. At least to me.

        I told friends of mine that I tossed it and looked at me like I was crazy. I did poke it with my thermapen and it was 70°, which was room temperature. Smell test wouldn’t help as all I could smell was the dry rub. I figured better safe than sorry.

        As someone who has had to be food safety manager certified 3 times in the last 12 years, I think you did the right thing. I would only keep it if it’s below 45 degrees at the highest.

      I agree. I would hate to lose my love for briskie over fifty bucks of meat I dropped the ball on. Food poisoning is not to be taken lightly. 70 degrees is not good.

        I was at Costco today and saw only one Packer brisket, the rest were choice briskets.
        There was very prime beef for sale.
