Today I was at Costco and they had prime briskets for $4.49/lb, while this is not a screaming deal in aggregate, itβs notable for Seattle! I grabbed the biggest one, my mantra is 17 pounds or more because I like to trim them to cook the flat and point separately and the bigger the better!! Mine is almost 19 pounds and was $85, it might even be a lefty π. She will wet age for 4 weeks and then I will celebrate almost spring with it. Next weekend I will cook the choice thats been wet aging with the last of my Oakridge - Black Ops. Itβs been a long time since i cooked a brisket and I have all sorts of new tools in the arsenal! And Iβve never cooked a prime one!! I am excited!! π π₯π₯πΏοΈ

Just scored one as well! They didn't have any select briskets in stock. Let hope this trend keeps going out here in Washington. I need all the help I can get when smoking meats and couldn't bring myself to cook a select for fear I would dry them out to much
