dlaslo mentioned in his thread about wrapping that Choice briskets are $2.99/lb at Costco, so I ran out and grabbed one. Our Costco usually has Prime packers, but Choice was the only option today.
As has been noted by others, the Costco butchers often leave a thin end on the flat which can easily dry out. I particularly liked the butchery on this one, but most of them were significantly better than usual. The second pic below is the end of the flat.

I saw those today, too. Choice was the only choice. The layers of fat were borderline obscene! I even made a face at one of the cutters. 😝 needless to say, I did not grab one.
Very well! I like to have a couple in the freezer at all times. Sometimes I keep it in the original factory cryovac bag, but I often cut it up for smaller family uses…separate the point from the flat, cut the flat in half, so I have three manageable chunks of beef.
They’ve done well for months in a home vac sealed bag.
Picked up a four pound chuckie yesterday, on sale $12. Salted it for a day then into the InstaPot to sear w/cel car n onion, high press 30 min OMG!!! Lable said "under the blade" Not Fatty

Stopped at Costco after work last night just to pick up a brisket..
will be attempting my first full packer (a small one) tomorrow.
Got it trimmed and seasoned with Holy Cow this morning. Will have it on the Bronco at oh dark thirty tomorrow morning if all goes well, I'll stop at pick up another couple for the freezer..
Just picked up a giant 15 pounder today. I plan on cutting a good chunk of the flat off to grind. I think I will then smoke what is left as a small packer. Maybe burnt ends? I’ve never tried that piece before. First time we have a packer that isn’t for a specific event.
