    HEB has briskets on sale for $1.87 per lb! Even though it’s select, it’s still a helluva price and all of HEB’s meat is usually pretty darn good.

    wow....all I can say is wow
    a chain up here has AAA grade for $7.88/LB
    and if I don't jump on that it'll be back up to $9.99/LB on weds

        If you have the fridge space to wet age them for at least 60 days they can be as good as some choice. It makes a real difference IMHO.

          My wife was visiting the oldest in NH. She was on her way home today and stopped at Costco before hitting the road and scored a prime brisket for $2.99/lb. So yeah, this is a good deal!

          During crawfish season, H‑E‑B sells fresh boiled crawfish by the pound in front of their stores. Just another neat touch they add to the shopping experience.

            Unfortunately for we folk in the boonies those prices aren't offered at all locations. That said, if they were available here I'd probably grab a couple to grind into burger meat. Even as select grade there's likely enough fat there to achieve 80/20 or better and still have trimmings enough to render some tallow to smoke.

            That's my thinking. The first/only brisket I have done was Prime, so that is my baseline. (And what I wonderful baseline to have.) Still, at these prices, I'm going to pick one of these up, unless they look as lean as flank steak or something.

            The one thing I have to keep reminding myself of is that the USDA grade is the grade of the overall animal not the cut of meat in your hands, so sometimes select can nudge it self up to choice, as it were.

              Oak Smoke and others. Here’s a brisket I picked up for Clawbear57 . I’ll be bringing it to him at the NC MeatUp in one month. I’ve never wet aged a brisket, I usually either froze them or smoked it soon after buying. It’s got a good deal of fat on it, but not abnormally so. I’ve got fridge space for it in my garage or I can freeze it, either way. My fridge usually stays at about 35*-37*. Should I just keep it in the fridge to start wet aging or should I freeze it. I’d bring it with me to NC on ice of course. Depending on the answers Clawbear57 , do you have a preference on this?

                That’s a nice brisket. The first step is to check to see there are absolutely no leaks. Anything but a perfect seal will cause it to spoil. You fridge temp is fine. You can age it until time to go that’s no problem. They can be frozen at the end of aging or anytime you want. Freezing select beef won’t hurt a thing. There will be an off putting odor when it is first opened. It’s not spoiled, just rinse it off and the odor will go away. It is a very noticeable improvement in tenderness and flavor.

              So I picked one up this afternoon. They were very much running low.....only five were left. These are Choice grade, not Select! (At at least the ones left for me.) It very much has the USDA Choice emblem on the cryovac.

              The one I picked up is decently marbled, but certainly not as well as Prime ones in the bin next to them.

              And, stupid story, so I apparently was taking too long to see if I wanted to grab another one as someone behind me cleared their throat and I saw someone standing there clearly waiting to get in on this. So, I decided to not be greedy and shuffled away with the one already in my cart.

              Now comes the hard part. My wife is going to think I am cooking this this weekend....but I want to hold out until the end of May for Panhead John Memorial Day cook.

                I am failing to see the issue. Go back, buy another one for this weekend and save the other one for the Memorial Day cook... Sounds like a win-win..

              I just bought two big ones. No grade so I assume select but they look like they could be choice. 35lbs for $65.00
