22" Weber Kettle w/SNS, 18" WSM, Bronco, Grilla Chimp, Traeger Tailgater, UDS, Camp Chef Tahoe Stove.
I cooked mine on my Bronco a few days ago. It ran at about 230-235 and it took around 9 hours. I used B&B lump and at around 7 hours the temps started dropping I think because lump doesn't fit tightly together like briquettes. I took the grate and diffuser out, stirred the remainder of the lump, and it spiked to up around 300, but it settled back down to around 250 for the remainder of the cook. The Bronco is pretty steady, it has all but replaced my WSM.

Thanks for the details. Did you use wood?
I’m guessing these shrink too much and are too tender to hang?

Reds Fan 5 I did use some post oak chunks. I think you can hang them, they are not fall apart tender thought they are tender. I just didn't think about hanging themLast edited by klflowers; October 22, 2022, 09:57 PM.

Congrats. I saw beef short ribs at my Costco for the first time several weeks ago, but they were flanken cut and not Costco brand. I did not buy them.
If they had been Costco brand, I would have asked if they cut them in store hoping I could buy some whole.

Was at Costco around 9:30am. Teenager works near there and finishes at 5pm. Decided to stop back in to get another plate of beef ribs around 4:30pm Beef ribs, pork spares and baby backs gone. In their place 2 8lb pork butts vacuum sealed for $2.99/lb. In this area that’s the lowest price I’ve seen on pork shoulder in awhile.
So, spare ribs at $1.99/lb, beef plate ribs at $6.99/lb and butts for $2.99/lb is a successful shopping day.

Yeah Costco is doing 1.99/lb STL and BB ribs this weekend. Wife was there today, but she 'forgot' the ice chest and I knew she wouldn't be home for 4-5 hours, so I told her to pass. <sigh> convenient of her to 'forget' the cooler. I was stuck running my friend's monster offset cooking 137lbs of meat and 6 giant trays of sides for his daughter's wedding, so I couldn't go. I am probably going to go down tomorrow to take some ribs to a friend in the hospital, but I'm gonna guess there won't be much available by then.
@6.99/lb for plate ribs, I'd'a bought 'em out, just about.
