Sid P I have the 30" with 700 square inches of cooking area. There is some space that can't be used with the circle because you don't want stuff falling off the edge. With a rectangle if it has edges you can use the entire area without worrying about spilling.
My opinion is it has more. I have a 4 burner Blackstone at the shop and no matter what you do to level it all the grease puddles in the corners somewhere. The reason why is the rectangle will warp a little or a lot in some cases under heat. The round griddle is much stronger because its a circle and you gain cooking space because you don't have the edges to contend with. It"s my opinion under only a few uses being I grabbed mine a few weeks ago.
Amazon just dropped the price on the 30" to $347.12, while not as good as the Woot deal this is the lowest price you will see on Amazon looking at their price history over the last year.
