If you do, do so before it gets much hotter outside. I got a shipment from them a month ago that spent a day too long sitting on a hot UPS or Fedex truck. All items were thawed, and 2 items were above 40 degrees and got tossed. It is hard to toss a big hunk of beef chuck ribs and a tri-tip, but had to be done. They promptly refunded the money for those 2 items. Many other folks that week got their orders in 2 days, completely frozen. Mine sat around for 3 and that was about a day too long.
They are great but im holding off until i want to place a big enough order to justify the air shipping. Had the same experience with stuff sitting on a ups truck/warehouse for too long now that the weather is heating up. Not their fault of course, their customer service is awesome. But they are a small family run business and i dont want to place smaller orders knowing its 50/50 at best if it gets here frozen or they end up eating the cost.
I put my order in yesterday, and made sure to request that it not be shipped before Monday. So far I have not had a problem with anything showing up less than very cold, if not still frozen solid. In fact the only "problem" I've ever had was that they double shipped my very first order with them. They were very sorry for the inconvenience, and I got over it without seeking professional help.
Last night’s dinner was the Click stew chunks, rubbed with Meat Church Holy Cow, then marinaded in Bachan Japanese BBQ Sauce at lunch, and then griddled to medium rarish, just let em sit on med-high griddle, toss occasionally, cook to exterior color. Served over rice because I didn’t feel like toasting up some taco shells.
wife initially described as like the beef you get with good Chinese food. The rub came through and gave a nice peppery bite. Good beef underneath.
I got the bigger stew chunks with hopes of kebabs, but too small for that.
Cooking this 4.5 lb Click rib roast today or tomorrow. It is dry brining now. I went easy on the salt because the final seasoning has salt as well. I'm using this recipe: https://www.atbbq.com/thesauce/tuscan-prime-rib/
Got my order yesterday. HUGE box (for a brisket and a chuck roast). I had fears. Open the giant box, there was an insulated bag, foam filled, then inside that, was a smaller box. I was a bit concerned, as this box was wet and discolored on the bottom corner. Like seriously soaked. Open that up, and there's a plastic bag, which I think had dry ice at one point. Dig through paper, find the chucky... frozen solid and frosty on the outside. Dig out the brisket, and it was the same, frozen solid, and frosty.
Was two days in transit, and I think a third day would have been a problem. Now my freezer is FULL.
I'm pretty bummed. I ordered a brisket, beef ribs, and 2 steaks... all arrived thawed, no sight of dry ice or anything in the package.
The steaks were thawed but still cold and the IR showed 35-40, I'll eat those.
I'm iffy on the brisket, the meatier part of it was still semi frozen and the IR showed it below 40, but it was close to 55 on the fat cap which was also not cold to the touch. I need to go poke it with the probe in a minute, but I need an angry beer first (threw it and the steaks in the freezer)
*EDIT* of only one spot on the brisket fat cap was 48 when probed, every other spot I probed was below 40 so this isn't as bad as I'd feared.
The beef ribs though? Pretty sure they go in the trash unless cooking them to 203 will be safe? Also the bag leaked juices all over everything...
Well, Click was VERY fast to make this right. I guess the shipping department forgot to add in the ice gel packs and dry ice. The meat looks like really good quality and I'm sad I won't be able to try the ribs, but I'll have to wait until fall or winter to give them another shot as the chances of a melted delivery greatly increase for me until then.
Got my order today, sighed, was at the shop when ups dropped off.
Box was leaking and I wanted to cry, grabbed my temp gun and the kabob meat was 55, the ribs wer 48 and the brisket was 45
Call Dennis, he traced the shipment and found it sat at the hub in Indianapolis for 3 days!
Asked if I wanted a refund, appreciate, but said no, let’s try again if they were ok with it.
Sent me tracking numbers immediately, and said someone there is monitoring my shipment.
Gotta give Click a shout out for trying to make things right, when the problem was transport
I got my Click shipment on Saturday, right on schedule of when they said I would. 2 4-bone racks of beef ribs, 2 tri-tips. YUGE box, internal cold bag, everything was frozen solid in spite of 2 days traveling.
I was happy as far as that goes. I think the meat looks a little skinny, though. 4-bone racks of beef dino ribs, one just over 3lbs, one just over 4, I think. I'd have to look to verify, but they look skinny to me. The tri-tips both look small, and there was no weight on the label, I'll weight them, too, and report back.
Got my replacement order today. Everything was in order, except for one little detail.
I have reached out to them about this multiple times today, if I cant get an answer, I'll load the picture of my issue later.
Again, happy with the prompt service, so I'm giving them time to respond to my problem.
