- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I was super close to ordering these knives, then read (and read) a lot of reviews, and ended up deciding to go with more Victorinox knives to add to my 12" slicer that I really like. I do have a Misen dutch oven and grill pan that I really like, but read a number of negative reviews about the knives, specifically the tested hardness levels and such for the price point. Misen won't say exactly what steel they use, just that it is "Japanese steel".

Victorinox seems to be the best bang for the money.

bbqLuv agreed - they seem to be the most recommended budget chef's knife on a lot of cooking sites. The handle is molded versus full tang, but I don't think that really matters for me. I'm not going to replace the scales on a kitchen knife handle ever anyway. I did that when I was a teenager and made a knife once, but that's about it.
I already had the Victorinox granton blade slicer, and just added a 10.25" bread knife to the mix, and plan to order the chef's knife next.
