If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I doubt it. There is no problem monitoring multiple cookers - I've done that even with a simple 2 channel Smoke, but most controllers only have one fan control output, even if they have 6 input channels.

Back in my lab days, I always opted for dedicated controllers for each device rather than any kind of multi setup. This way if a controller malfunctions, only one device is affected, whereas if the multi-controller fouls up, they all go down. I doubt I'll ever have more than one smoker, but I'd apply this principle if I did.
