    Large electric roaster recommendations??!

    Hello folks,

I’m looking for an electric counter top roaster that’s large enough to fit a large wrapped brisket, e.g., 19lbs.

The largest I’m seeing most places is 22qt, a couple 24 qts.

    Would a 22 or 24 work?

I can’t find anything larger It looks like a 26 would work but they seem to be out of stock most places.

    Ideas, or suggestions appreciated!

Would it be possible to cut the brisket into chunks to help it fit?

Do you have a Walmart+ account?

If so, they will ship you a 26qt in 2 days for free.

I see the 26 qt is unavailable on the Wallmart website. I only see 24.

I'll be damned. It shows "Delivery 2 days" but then when I click the product, it shows Out-Of-Stock.
            Never seen that happen before...

You could use this as an excuse to buy an electric smoker.

I use an electric smoker for hold overs, and to finish wrapped cooks.

I picked up a 22 quart roaster at Wally World before Thanksgiving. We used it to hold/serve turkey for Thanksgiving and an unwrapped brisket for Christmas. I don’t remember weight of the brisket (it was medium to large…), but the 22 quart worked fine.

          Edited to add inner dimensions in inches: 17 3/8 long X 11 1/2 wide X 6 1/2 deep.

Is 19lbs your pre-cook, trimmed weight?

Exactly, at best I'm 8 pounds cooked off a 19lber

This would be the only reason for one of these, in my life. I know some people, this is what they've got, or all they're allowed to have, etc. Maybe in apartment complexes or certain HOAs, or from what I'm seeing, someday maybe in certain localities of the country. But, as a holding oven, they just might work.

I think I might build myself a holding oven, or I might look for a used Alto-Sham or the like. I'm wondering if an Alto-Sham type cabinet will hold temp outside? Maybe not in the COLD cold, like near or below freezing in the winter, but say in the 40s or 50s? I could set it up in the garage if I needed to, but there's no easy way from my backyard to my garage, so it would be a PITA to move it from season to season. Much prefer something I can leave on the back porch... hence my thoughts of build an insulated cabinet myself with a small propane burner - essentially a larger insulated version of my Camp Chef Smoke Vault 24.

Actually would be nice to have a dual-fuel, able to heat with electric or propane.... hmmmm.... that's got me thinking.... and some kind of PID controller would be awesome, though with something like this, titration of heat would be important. If kept in the garage out of the weather, probably not as major a deal, but overnight holds on the back porch, temp drops could really screw things up. I'd rather be able to set and forget and not worry about having to run my Fireboard or something just to monitor the holding cabinet.

            Man, this gets complicated...

Yes, I’d love to have an Alto-Sham. They’re expensive!
