Someone gave me honey baked ham back in February that is all sliced up and vac-sealed in my freezer. I'm planning on serving it tomorrow in addition to the ribs because my MIL doesn't like ribs. What temp should I set the SV and how long should it ride in the bath. Also, what, if anything, might you recommend to doctor the ham up after it's ready? A glaze?

I love cooking with wine. Sometimes I put it in my food.
One cannot have too many grills.
I would set the SV to 125°. The instructions on the ham I made for Christmas basically said put it in the oven at 325° until 130°.
I'm thinking 125° is fine. The glaze I used was just butter and brown sugar with a little water to dilute. I grilled some pineapple to a nice and almost charred state to go with the ham. It was a hit.

I'd go to 140F/60C for food safety, just to be certain. That's a pretty standard serving temp for ham in any case. If it's already sliced, you won't need to go for long, an hour should do it, maybe 90 min, even from frozen.
