Hey, so I get the idea behind how to do several hour (4-5+) on the SNS. What about a 1-2 hour smoke? For example, I have some chicken thighs I was going to marinate and smoke, for tacos, etc. THey're not going to take that long, though. I could just do a smaller fire in the smaller Weber (I have one that they don't seem to make anymore that's 16"). But I can also see wanting the sheer size of the 22" in other cases... how do you all do shorter smokes with an SNS?

Large Big Green Egg with a Ceramic Grill Store rack system, and the SnS setup.

Rubs with salt: Meat Church Holy Cow.
Rubs without salt: Home-mixed versions of previously sold SnS Grills Rocky's Rub and Not Just for Beef using their recipe. SPOG.
Spices: Lots of 'em.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
While I use my SNS for searing and low and slow, I've often found myself using my Weber charcoal baskets for short cooks like chicken, just filling both with lit coals.

fuzzydaddy is correct. Go to the the abcbarbecue.com site and find the video on how to cook chicken thighs and legs. This is the method I use and it works! Perfect bone-in thighs every single time....
