I got a gift card to the local meat emporium as a retirement gift, so I redeemed it yesterday for 2 nice thick dry-aged Prime ribeye steaks. Probably the biggest steaks I have ever purchased! I'm planning to do them using the cold grate reverse sear method on the copper kettle and SnS tomorrow evening.

OK, morning-after report. Overall, a resounding success! I need to make a few adjustments to my implementation of the technique, mostly in terms of how much charcoal I use. Didn't catch that the you-tube video was on a 26", so I had a bit more (OK, a LOT) more energy going on than I needed. However, I was alert, and things didn't turn burnt embers on the grate.
The tied-up steak was the best of the two, cooked better and was probably more aged, based on the color. It cooked to a perfect medium rare, put on the cold grate to sear at 115F and only took 3 one-minute flips, one more minute and it would have been over-cooked. The bone-in steak cooked faster, and was closer to medium, but still delicious.
This turned into a birthday dinner for my wife (today's the day). She is self-proclaimed as not that much of a steak eater, but she polished off the entire 1 lb. bone-less one and declared it the best steak ever, by far. The steaks were served with a gorgonzola compound butter on top, and a caesar salad with her amazing home-made dressing, with anchovies!
