Going to do my first turkey on the kettle using the rotisserie. Planning to use the SnS and KBB. Do you recommend leaving the SnS dry or adding water?

Having used the rotisserie multiple times on my kettle, I recommend NOT using the SnS. It channels the heat directly up whereas you want the turkey to be exposed to as much radiant heat as possible. If you have the standard charcoal basket I'd use that. Don't push it all of the way to the edge - just use it to help corral and mound the coals. I've never used water when cooking a turkey on the rotisserie.

Did the turkey today on the Weber Kettle with the rotisserie. No brine, just salt and pepper and then EVOO coating. Cooked for 3 hours (avg 325) over KBB and cherry and hickory chunks. Did not use the SnS, just the Weber charcoal baskets on each side with a drip pan in the middle. Mild smoke flavor and very moist. Was a 14lb generic store bird. Wife said to do it this way from now on. Thanks for all the inputs.
