    made some wings with the vortex and it just doesnt get better. Probably never woulda found out about this thing had it not been for that thread and AR.

      Vortex with foil and vents wide open gets me about 435F long enough to cook chicken.

      Turned a pit bull fan on full in the next test and only made it to 485F, and that only lasted 5-10 minutes.

      To top 500 indirect air temp at grate level is going to require the dragon fan in some way it seems and addition of fuel to keep it going.

      I also tried the wok on top of the vortex. Reached 400F in one minute. Not nearly as fast as the propane kahuna burner (600 in a minute) or the chimney of insanity wok rig I bolted together (800+) or even the rocket stove (600+) with fan assist.

        I like the Tel-Temp gauge. I'm going to do that mod. Right now using a Weber bladder port with a grate probe stuck through it. Should be accurate but two readings would be fun to have.

      Polarbear777 Ive been able to hit in the 480-90 range every time with no foil and no fan. I was using kingsford lump briquettes cause it was all i had at the time. Maybe they burn that bit hotter.

        I’m using Stubbs natural in this case but same result with KBB.

        I’m measuring with both a probe and a dial thermometer at grate level and they agree.
        You can see from the pics that the dome dial thermometer is pegged well above 600.

        You're way ahead of me. I'll have to hook up my fan and see what results I get. I think it will be consistent with what you're experiencing. I just bought a Thermoworks IM4 so I'll be able to get more accurate readings.
