Honestly I wouldn't overthink it to much. Of all the outdoor cooking I've played with this is about as forgiving as it comes. I think lid on or lid off will produce the great results.
I started my testing with all lid on. I'm so happy with the results I dont see leaving it off much. UNTIL I start roto on an open fire tests
So far I've done pulled pork, loin back ribs, round roast, 15 chickens or so. Parts and whole. All just plain awesome.
​​​​​​I'm going to do a turkey breast this weekend for a training cook. One of this years turkeys will be on the roto for sure. I dont think the whole bird will get done lid off but This breast just may.
