To date, my go to is using a hearty pile of hot coals, the SnS and the frequent flipaloo technique. Am I losing out on searing flavor NOT using Grill Grates or the Drip n' Griddle Pan? If so, which product is best for Beuf de Maillard?

I would say not. My go to many times is sear directly on some good ole oak coals! But alas, mostly these days I use my SnS fired up to bazooka speed, and my Craycort iron grates.
