I’m going to use my stainless steel drip and griddle as a griddle pan for the first time today. I know stainless steel can warp. How many coals can I use to safely cook on it without warping? I’m going to cook chicken and some veggies on it

If you have the SnS, I'd fill it halfway with lit coals. That would be about 2/3 of a Weber chimney.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I’ve got two Drip ‘n Griddles and have used the older one as a griddle a few times. It is warped and rocks a little on a flat surface now. Second one I use as a drip pan, a prep pan, and to take the cooked meat into the house.
As someone else mentioned, don’t put a full chimney of coals directly beneath it, and you can control the heat by moving it on and off the area over the coals.
The main issue for me is that stainless is not really a non stick cooking surface, so you need to use lots of oils compared to seasoned cast iron or carbon steel.

I've used the ss drip pan as a griddle on my Weber Spirit gas grill all the time. Works great. I've only ever used the cast iron drip n griddle on the kettle for fear of warping.
