I'm doing some wings this weekend on my 18" webber using the vortex. I'm thinking of adding a handful of cherry wood pellets to the hot coals to add a kiss of smoke flavor without overwhelming the flavor of the chicken and seasoning. Has anyone here done this? Is this a good idea? Any specific techniques or suggestions?
I've thrown a chunk of wood on top of my Vortex before, worked out good. I think pellets wouldn't last long enough, unless you used one of those tube-things (A-maz-n tube?).
Agree with Jfrosty27 I’d use cherry wood chunks. When I use my vortex I put a wood chunk or two in the bottom of the vortex and pour the coals on top. I used to put the wood on the cooking grate above the vortex, but I found when removing the lid, ash from the wood would sometimes blow onto the food. I get just as much smoke flavor burying the wood.
Agreed. I used to do the wood-on-top-of-the-grate thing (it did look pretty cool), but it didn't take much wind to blow some of my pecan wood ask onto my gorgeous chicken wings.
