I'm inspired by Meathead's pastrami rendition and thus ask this question. Anyone out there who has tried to make beef tongue? I tried once and it was...meh. But trying new meats is kind of where in headed.

You did the pastrami? I'm jealous. Any tips? I'm excited about trying that, too.

It's a process and takes weeks if you corn your own meat. Make a lot. It goes fast and no matter how much you make you'll wish you had more.

Hsloves, yes I did, I followed This, except I did not steam and I used a pre- prepared Corned beef, I'm going to do 2 more this weekend, it will be my first all nite cook.

Haven't. I tend to find cuts I like and stick with them. That said, I do have a flap steak in the fridge I haven't cooked before, so I guess I'm callin myself a liar. Lol.
