    I'll put up some pictures shortly.... But I'm really impressed with my first 4# chuck over a pan of beans! Super easy and really consistent cook temp. Very, very impressed.

        Bmyoung Did you use any Thermos while you were cooking? If not I would recommend them. But it sounds like your cook came out great.

                Uh... Yeah I knew that... Um... Actually yes and no. I'm waiting for a tel-tru that I ordered to install - but I did have a thermopen and got a really consistent 230-240 sticking the probe into the dome vents... I figure it was a bit lower at the level of the meat.. But it just seemed to hold REALLY steady, so I may yet adjust my vent settings but was really surprised given how much charcoal was in there

                I'm not new to smoking or cooking - just the S&S -
