Way back when I worked for a knife maker and taught to sharpen on stones I was told that there were only two things a knife could be. Sharp enough to shave with, and in need of sharpening. Over the course of those summers I shaved all the hair off both arms and legs. I won't bore you with what hair went next.
The point is, if you can shave with it, it's sharp, if you can't it's not.
