    Now That's a Kniffffeee

    Sometimes a man gotta do what a man gotta do. Christmas coming but forget the wait. Mom and Dad had a beautiful bone handled carving set that would only come out on special occasions like a Sunday roast. Heaven knows what happened to that set but I needed a good set myself. I've got plenty of knives so I did this just because.

    Been looking at Japanese Damascus steel and knives like Shun but to be honest the ergonomics just didn't fit my hand the way I like. My everyday utility knife is a 25+ year old Henckels chef's Five Start that stays sharp, works great and fits my hand like a glove. Good old German steel. So the other day I run across a knife that's a joint venture with Zwilling Henckels and the master knife maker Bob Kramer utilizing German steel and manufactured using the Damascus process in Japan. Talk about the best of both worlds !!

    Well that got my attention, so I splurged a bought a nice razor sharp carving set. You can bet it will adorn my Thanksgiving table !!!

      That is beautiful. I dabble with sharpening knives professionally now and again.
      I love how a good German steel sharpens and Damascus is truly a work of art. Enjoy that blade and keep it sharp.

                  I have a couple of Kramer’s . They are great!!!

                  keep them at 14° and they stay awesome. No I don’t have a laser for that.
