I got mine in today, after hemming and hawing and finally giving in. I got the metal one, the XV, 3-stage, grind, hone, strop I guess.
Ran a few of my knives through and got good results. Mostly I am just using the last stage, the stropping one. A couple of older, tougher, duller ones I used the middle stage. I do have a Japanese style one that had a pretty good nicked area in the blade where it got dropped a few years back. I ran that one through the grind stage a few times (maybe 5 or 6 on each side?) until it evened the edge out and you couldn't tell where the damage was. Then through the hone and strop stages.
Most all of my knives will shave hair now, I tried one of my good Japanese ones (I think the Zhen VG-10 Gyuto I showed above) on some paper just now, and it'll make thin spaghetti out of that paper. Wow. It's very sharp now. I can't wait to find something to cut up with my knives again.
Guess I'm'a need to find something to cook tomorrow, eh? W00T!
Thanks for the recommendation, PJ. This thing is going to get a good bit of use - I expect I'll use the stropping stage fairly regularly and seldom, if ever, need to use the other two. Very solid machine.
