    Pics and VIDEO of my new automatic Hobart 1712 12" slicer in action!

    Well, I had to beat on the tray a bit to get the indexing knob unstuck, and got the support arms lubed up, now she moves up and down with ease.... and..... the automatic function works like a dream!




    First slab of bacon, sliced and even and BEAUTIFUL!

    I sliced that one manually.... you can see in the video, my BBQ cart it is sitting on is a little wobbly, I don't want to press my luck! lol

    But I am so stoked to get this thing up and running and oh my GOD it is going to save me sooooo much time and PAIN when slicing all the damned bacon I've been making! lol

      Just that single slab saved me almost 20-30 minutes, I bet. Got 3 more to slice up!

    That thing is awesome. I've alwasy wanted one of those.

    One thing you gotta do is buy a prime rib and slice it as thin as you can. It will be pure bliss to watch. Plus, it makes the best steak sandwich's possible.

              Thought ya'll might like to see some bacon being sliced.




              I'm going to have to do some more learning to get it to slice bacon effectively automatic-like. Some of that got a little shaggy at times, was getting pretty thin, as the bacon belly slab didn't have time to slide down on the sled as effectively. I THINK this is supposed to be a 2-speed machine, so I need to research that some more. I think I'd prefer it slower, and I need to oil and lube things up better so it runs a little smoother, and probably partially freeze the bacon slabs before slicing would help a little as well.

              But overall, I am VERY pleased with the results of it all!

              Overall this was about 16.5lbs after slicing and bagging. It started a bit over 18, so it's lost some moisture in the fridge over the last week since I smoked it - not a bad thing overall. This would have been probably close to 2 hours of hand slicing for me, with incredible cramps in the slicing hand.

              This batch was entirely cold-smoked, not brought up to temp at all. Never got above probably 60ºF. I am curious to see how it comes out and cooks up. I have another batch that I cold smoked as well, but I don't think we've cooked that up yet, it's in the freezer with about another 30-40 lbs probably.

              I really like this bacon making thing.

                Way back when, I worked a pizza place with a Hobart automatic like yours. In order to make the automatic slicing work properly, we had to add weight to the top of the handle that holds the meat on the sled, increasing downward pressure through the blade, and greatly increasing the slicing accuracy. It makes the edges cleaner, and the thickness much more uniform from start to finish.

                Congratulations on that monster! That is a lean, mean, slicin' machine!

                Yes, with the 2 kids coming home from college for Spring Break, that batch oughtta get us through... oh, Wed or Thurs anyways. lol

              that's some good slicin', but that wobbly table is a collapse just waitn' to happen. I wouldn't press my luck if I were you...

                Yeah it looks pretty bad, but it's really not, it's bolted together, just it's on 2 wheels and 2 solid legs. I'm going to make something more solid, smaller and easier to get in and out of the house. It's rated for 100lbs and this thing is 143lbs. So I'm definitely going to step up the game, though.
