    Oooooh, you dang people really got me in trouble now...

    All these stinkin' knife posts, got me shopping on Ebay for Rapala filet knives, then some b@st@rd on FB Marketplace has to post up a collection for sale... <sigh>


    I been eyeballing online, thinking of getting a 14" brisket slicing knife. I've been doing so many slabs of bacon lately, hand slicing it, and my 11" slicer is just... I dunno. I thought maybe getting a 12 or 14 inch version would be better. And also was tossing up about a serrated version for brisket slicing. So... here we go. (This is prolly gonna take a couple of posts due to the picture quantity limit, lol)

    So that niche is taken care of. That was all I was gonna buy from the guy, but he had a TON of other stuff, and honestly, his prices were WAY lower than I expected. I guess these things are available somewhere MUCH cheaper than you see them on Amazon. Sooooo, of course, I got caught up in the marketing. <sigh>

    Curious as to how the non-serrated steak knives hold up, being used on ceramic/glass plates and such. Let us know!

          I really need to work on lighting in my kitchen. <sigh> Been thinking that for a while, trying to take food pics.

          Anyways...

          Now I also need to look for something like a magnetic strip to hang on a wall and display these things. lol

          They're purty, and they feel good, and damn, but DAMN they are SHARP. The ultimate test is, do they HOLD their edges, and how easily do they gain their edge back with a sharpening steel rather than having to take a whetstone or something to them. These are not just going to be for show, I use my knives and I expect them to work. My 7" Victorinox gets the most use, and I've been really impressed with how well it's held up.

          We'll see about these show ponies. lol

            They look real nice. Like you said will they hold an edge. I have a Henckel sert my older son bought me probably fifteen years ago and he lauged when he seen them in the kitchen last fall. Said "you still have these?" I said absolutely when you get blades with good steel and know how to sharpen them why would I get rid of them? Hope they cut as good as they look for you

              I’d get a bull nose knife just to admire it!

              I had some cheap magnetic strips that didn’t last. I got a really good brushed stainless Zwilling that is fantastic. The difference in quality is noticeable both visually and tactile-ly.

                    Those are really nice, I really like Dalstrong's products but I only have one: the Shogun 12" slicing and carving knife. It works great on brisket and I used it to carve the turkey this past Thanksgiving. It is not serrated but works great!

                    I think you will really like the Nakiri, that style has been my go-to knife for 25 years for most kitchen work.

                        Gorgeous collection! I have 2 Dalstrong and they are both still scary sharp. This post sent me out to hunt for my knives that were in the van. Found them! One is a 14" Wusthof that tapers at the end. The curvy slicer (at top) is a Wusthof designed by Michael Fay, chief pitmaster of Aporkalypse Now BBQ. I flew up to compete in the Iron Man BBQ in Greencastle PA and Michael offered to loan me knives. I took one look at that one and told him I had to have it! Still one of my favorites. RIP Michael Fay.

                          Debating about letting her know or not? After watching her use my Zhen 6" Damascus utility knife for a few years, and hearing her scrape that edge sideways across the cutting boards, I'm really hoping she doesn't want to play with these! lol
