    Bread Knife

    Our bread knife is evil and is not very good at cutting sourdough with tough crust. It has slipped and cut both my wife and me, though that is partly because we had our hands in the wrong spot..but you get the point. I am posting a picture of my current one. I used on at my mom's house with tighter teeth that cut my sourdough way better. What bread knifes do you recommend that will not break the bank?

    I use a Victorinox serrated like this one. My wife’s favorite bread is the sourdough from the bakery at our supermarket. This goes through it beautifully but it will cut you if you get careless. This one is used, the new ones aren’t that bad. Most all my knives are Victorinox with the Fibrox handles, Click image for larger version

      +1 on the Victorinox. I've got this exact knife and recommend it. I've actually got a few of the Victorinox knives and like them. Really great quality without breaking the bank.

    Dexter-Russel is probably in the same ballpark. Ours looks like that except the handle's white.

          I’ve sharpened it and it has not helped much. I think the deep grooves are just not great for what I use it for.

        Looks like there is a Mercer one for $16.15 on Amazon. I like their brisket slicer. Should I assume the bread knife will be just as good.

          Just switch your knife with your mom's.

          Seriously though, do ya know what brand your mom's knife is? Since you already know you like it, that would seem to be a good solution.

            She’s on the other side of by the country. After shipping, it would be better to just buy a new one. Hers was nondescript from what I could tell. I should probably just ask her about it.

          At first I was like, how do you cut yourself with a bread knife....then I saw the knife. I think that is the knife I use to saw small tree branches off with! That thing has some teeth!!

            It came with a pretty cheap Chicago Cultery set we were given as a wedding present almost 11 years ago. The knives have served us well as long as we keep them sharp. I guess that one is a victim of being too cheap…

          I have a Gunter Wilhelm offset bread knife that I’m pretty happy with. I bought it specifically for when I make sourdough. I also really like the offset handle.

            My in-laws have a full monogrammed set of those knives, seem to really like them.

          I have one that came with the set of Cutco knives my wife got snookered into buying (that's the set her and the kids use), but here is mine that I specifically bought and use.

              We've had this knife for over 4 years now. Cuts a loaf of bread at least every other week, and daughter uses it for slicing lots of other stuff. Great bargain.

            I just bought a new HONE sharpener thanks to the MCS of this fine group. It arrives tomorrow. I have an electric knife that is serrated and it needs to be sharper. Plus I want to brighten up my others.

              texastweeter and Panhead John are on to something. That does not look like any bread knife I have ever seen, especially with that sword/dagger like point. I think just about anything would be better than that. I mean, quit cuttin yer selves, now! Stop it!

                I like using the Dexter brisket knife that Aaron Franklin recommended in his first book. Bought it several years ago. For me, it works great for tender breads as well as those artisanal loaves with more of a tough crust. That makes my brisket knife more than a one trick pony, which I also like.

                Now Franklin sells his own branded brisket knife at nearly twice the price of this tried 'n true one.

                  I’ve got a similar knife I bought at Smart & Final for like $10. I bought it for brisket, but it does great with bread too!
