New boning knife from my son for Christmas (Siembida Custom Knives)

My son gave me this boning knife he had custom made for me by Siembida Custom Knives. The blade has the perfect amount of flex, and the handle feels really great in the hand. I have butchered hundreds and hundreds of critters, so I can tell by holding a knife whether it is going to work well or not for cutting meat. This one is going to be my new favorite right. Guaranteed!

Siembida’s description: Whippoorwill boning knife in AEBL stainless steel with fire glow carbon fiber scales over cherry red liners with red g10 pins.
