    Chef knife

    I was considering buying my first real chef knife and wanted to but American made. I looked at Cutco and just read the recent posts about them. I've looked at Warther and was wondering if anyone had any experience with this company

    I’m not familiar with this brand. But, if you can go to a shop that has multiple knives, try them out in your hand. What feels best is going to be the best for you. Balance, weight, handle.

    Anyhow, can’t wait to see what you end up getting!

      This! If you can, get a hand on whatever you’re considering.

      Case in point. The first time I saw Global, I thought it was amazing. Soooo, I bought a couple. Turns out I hate the handle, but not as much as the weight & balance. I love my nice heavy German knives. ;-) They just languished in one of my knife rolls until I finally gave them to friend. They were a much better fit for her. (And her husband was happy because it saved him money. LOL)

    Don't have any of their knives, but their metal spatula is nice.

    Dexter russel is made in the USA as well. I love the knives of theirs I have.

      I have a Lamson vegetable cleaver that is downright deadly. It’s sharp like “shaving razor” sharp.

      I don’t use it often enough to know how well it holds that edge (the vegetable cleaver is an odd size and shape for my style), but if their chef’s knife is similarly sharp I wouldn’t hesitate to use it. The brand was recommended by Kimball at Milk Street.

        I made my decision a while ago but wasn't sure what the final result would be. Sort of a long story. I wanted an American made product and I wanted a forged knife, so I decided to go with Lamson.

        This happened during the holiday season, and I was like a kid at Christmas waiting for it to arrive. Constantly checking the shipping progress. When it arrived, I couldn't wait to try it. And when I did, I felt like the boy who expected an awesome present and got underwear. The edge on the knife I received was not finished. It was rough. Tried cutting cauliflower florets and the blade dragged. I struggled to cut a thin slice of my cold pastrami. I was pissed. I felt as though I had been taken. Now I'm the type of person who cuts all ties to someone who has done me wrong. You're dead to me. I expected the usual run around that most manufacturers will give you these days. I decided that I'd keep the knife but give a scathing review of what happened. Eventually I calmed down and reached out to the company to tell them how displeased I was with my purchase. They got back to me and showed their concern. They were going to take the knife back and sharpen it or send me a new one. Wow was not expecting that. I explained that I had already used a hone on the knife and that had started to improve the edge. I could still keep it or send it back anyway. I decided to just keep it. So, here's the review. As you can see it's a beautiful knife. Comfortable handle, a little heavy and weight forward but that's what I expected from a forged knife. I have no doubt that the edge would have been sharp. It just got missed in QA. Lamson stands behind their products and I wouldn't hesitate to purchase another one of their products.

          Buying a knife and having it arrive less than sharp is so disappointing. At least they reached out to try and make it right. I probably would have exchanged it, but there's definitely value is being "done" with the issue, as long as you are satisfied you can make it sharp yourself. It is quite a nice looking knife.

        I still would have sent it back for a full exchange, had I been in your boots, Starsky .

        Factory sharpening and hone sharpening at home are two very different things.

        They should at the very least pay for professional sharpening available locally.
