I've had a three stage Chef's Choice for a number of years and it still works great. Usually only use the last one on the right to "touch up" a knife's edge but I use the 2nd one for a couple of swipes before using the third one. Excellent edge each time!

I was looking at electric knife sharpeners on Amazon.
Definitely wanted 3 stage or better.
