I use this sharpener. Works well but there is a learning curve. Don’t use your best knives until you get the hang of it. Ask me how I know🫤🙄.

I've had a three stage Chef's Choice for a number of years and it still works great. Usually only use the last one on the right to "touch up" a knife's edge but I use the 2nd one for a couple of swipes before using the third one. Excellent edge each time!
